Sweet Smells from the Kitchen


Every once in a while you have a fool-proof popular holiday (tried and true) recipe that makes everyone swoon.  Anyone want to share theirs?


I am totally into SOUTHERN cooking.  So much so, that I have actually moved cities and had my coffee can of bacon drippings insured them with the moving company among my contents.

About five years ago, I was cooking for a good girl friend and had a recipe for BlueBell ice cream biscuits.  Those biscuits STILL haunt me today.  Literally for months my friend would say "hey, can you get me the recipe?"  I swear I have looked in every cookbook I own (which narrows it down to about 500) and I have never come across it again.  I am confidant after a while she thought I just was not giving the secret formula up.  I wanted to make them again for Thanksgiving this year, I broke down and even called the Chairman of BlueBell ....he said "Lord knows, the possibilities folks do with Homemade Vanilla"

Someone in my past life made the MOST delicious chicken enchiladas....I am teetering on whether to call him for the formula as well.   This person's Mom made a Sour Cream Chocolate Chip Pound Cake -- after twenty years, it is one of my favorite things to make and I make it at least once a month.  In fact, about three years ago I made it for a New Orleans food critic and it received RAVE reviews!!!

the Bluebell homemade Vanilla rolls sound heavenly. My Granny had a bread pudding secret formula that everyone went wild over every holidays

The sauce is what makes it SO YUMMY

4.5 cups bread cubed
1/2 cup raisins or cranberries
2 c half and half
1/4 c butter (oleo)
1/2 c sugar
1/2 c brown sugar
2 eggs beaten
1 T vanilla
1/2 T nutmeg

large bowl combine bread and raisins set aside. Mix half and half with butter in saucepan and cook over med heat until butter is melted. pour over bread and let stand 10 miinutes. stir in sugar, brown sugar, eggs and vanilla and nutmeg. Spoon into a greased 1.5 qt casserole dish - bake at 350 for 50 mins or until pudding is set in center.

Sauce: (BEST PART)

1/2 C butter
1/2 C sugar
1/2 C whipping Cream
1 T vanilla

combine butter, sugar, whipping cream in a saucepan over med heat and stir until mix comes to a full rolling boil and thickens (about 5-7 mins) stir in vanilla and spoon over bread pudding warm!

Bourbon Roll

1 can Eagle Brand Condensed Mil
1/4 c bourbon whiskey
1 box vanilla wafers
1/2 lb candied pineapples (cup up)
1/2 lb candied cherries cup up
2 c pecans
powdered sugar

mix milk whiskey. add to crumbs gradually, mixing well. add fruit and pecans. work in until all crumbs are taken up divide into three rolls have powdered sugar sifted onto wax paper roll and shape with fingers covering well . store in fridge, slice to serve


I live in NYC now and still recall my Mom making us these at the holidays

our favorite side dish, never any left.
Creamy Spinach Orzo
2 tbs.olive oil
1 med.onion,chopped
1clove garlic,smashed
3/4 tsp.ground cumin
1 tsp.salt
pepper
2 cans(13 oz.each0
1 cup orzo pasta
1 pkg.(10 oz) frozen,chopped,thawed and squeezed dry
opt.:chopped fresh parsley,lemon slices.
In pot heat oil,add onions,garlic,cumin,salt,pepper.cook until onion softens ,on low heat.
add chicken broth,increase heat, bring to boil. add orzo,spinach,cover and reduce heat to low simmer until most of liquid is absorbed.about 10 min. serve with spinkled parsley/lemon slices on top. can be double,tripled/on up.
it's a great side dish for holidays, and the kids like it too.

At this time of the year I think of going to my grandparents farm in Arkansas. there were 8 kids in my momma's fam. and as many as could come would show up and all those cousins. there were about 6 of us who were practically the same age. one year we became acquainted with the turkeys and even named 'em. yep,we all wandered up just as they were slaughtering those birds.we ran screaming and crying to the house,none of us would eat the turkey that year.we were being raised as city children and had never seen such a bloodbath!

can of caviar on bed of ice + equally chilled bubbly=Voila! my Christmas brunch. Tried and true. ;)

All this gooey yummy sweet stuff is making my teeth hurt~in the best possible way.

sorry, for the orzo, it is 2 cans(13 oz each) of chicken broth or homemade broth if so inclined.1 (10 oz.)pkg. spinach.

Not a recipe, but a wonderful gift!
My cousin put together a Family Cookbook with 4 generations of recipes! So special, especially as a gift to pass down to my daughters!
Its amazing that some of the simple recipes are still the most delicious!

Any Southern lady worth her salt in the kitchen owns a copy of Southern Sideboards from the Junior League of Jackson, Mississippi. My favorite holiday recipe from it is Scalloped Pineaple. It is a heart attack on a plate, but sooo worth it.

4 Cups of torn, stale hamburger buns (yes, you read that right)
1 (20 oz) can of pineapple chuncks, drained
3 eggs, beaten
2 cups sugar
1 cup butter, melted

Toss together bread and pineapple chunks and placed in a greased 2-quart baking dish. Combine remaining ingredients and pour over pineapple. Bake at 350 for 30 minutes. Cassarole can be made and refrigerated overnight before baking. Reheats well. Good with ham. Serves 8.

Krisi, if you're interested in some really good recipes, you might want to check out Taste of Home Message Board, or bulletin board. Lots of great recipes and nice ladies there as well. This is by the Reiman (publishing) Group, however, they were bought out a few years ago by Readers Digest.
